Strawberry Sorbet with Mint (2 Ingredients, 5 Minutes!) Recipe - Rachel Cooks® (1)

About this Strawberry Sorbet

  • Easy to make: This sorbet is the easiest thing ever to make – and who doesn’t want that during the summer? All you do is mix frozen berries and fresh mint together in a high speed blender. Add just enough water to get things going, and there ya have it – strawberry sorbet! If it’s not sweet enough for you, you can add a bit of your favorite sweetener, but I think it’s absolutely perfect just the way it is.
  • Beautiful: Speaking of perfection, can we talk just for a second about the color of this stuff? Isn’t it beyond gorgeous? I just love it.
  • Refreshing and healthy: This is the ultimate summer treat! And it’s full of fruit so you can feel great about eating it.

Make it your Own

  • Switch up the herbs: Try basil instead of mint!
  • Leave out the herbs: You can easily make this with just strawberries. Or add a splash of vanilla extract to give it some depth.
  • Add different fruit: Try adding in different types of frozen fruit. Consider raspberries, mango, or bananas.

All you need are a blender, two ingredients, and five minutes to make refreshing and healthy strawberry sorbet with mint.

Ingredients

  • 16 ounces frozen strawberries (34 cups)
  • ½ cup water
  • ¼ cup loosely packed fresh mint, more for garnish if desired

Instructions

  • Blend in a high speed blender, pushing down sides as needed. Keep repeating this until sorbet is smooth. If needed, add a few extra drops of water – little by little. If you overdo the water, you’ll have a smoothie, not sorbet.

  • Serve immediately garnished with fresh mint.

Notes

  • If sorbet is too tangy for your taste, add a small amount of sweetener of your choice.
  • Serving size: 1/2 cup.
