Our easy Taco soup recipe is a staple at our house. It can be thrown together in five minutes using mostly cans you have in your pantry, it's healthy, and the whole family loves it.
Easy Taco Soup Recipe
One of my favorite family recipes of all time (especially when I'm trying to eat healthy) is this yummy taco soup. I got it from a friend shortly after I got married fifteen years ago and it has been a favorite ever since.
Any recipe that can be thrown together in literally five minutes, is filling, delicious, healthy, and my kids will eat it, is an automatic win in my book.

I love to make a big batch for dinner on Sunday and eat it for lunches throughout the week. Whoever wants to can add chips and cheese and yummy toppings. When I am counting macros I will usually add a big scoop of plain greek yogurt and a couple tablespoons of chip strips.
Either way it is super satisfying and delicious.

Pro Tips:
- I have started buying pre chopped frozen onions at the grocery store and love them. They work great in this easy taco soup recipe. Seriously such a time saver and they still have a great flavor. I've been using them in tons of recipes lately.
- Taco soup freezes well for up to six months. Freeze right after cooking, before adding toppings, in an airtight container.
- I love recipes that are easily adapted and customizable. This is one of those recipes. If you need to substitute a different type of bean or veggie, go for it.
- Our favorite toppings include: cheese, sour cream or greek yogurt, chip strips, guacamole or avocado and cilantro.

Ingredients
- 1 Pound Ground Hamburger
- 1 Onion Chopped
- 1 Packet Taco Seasoning
- 1 Can Kidney Beans
- 1 Can Pinto Beans
- 1 Can Corn
- 2 Cans Stewed Tomatoes *Not drained, this makes the base of your soup. My kids prefer when I pulse it in the blender to puree the tomatoes before adding.
- Garlic Salt and Pepper to taste
- Chips, Cheese, Sour Cream, Guacamole *Optional, to Garnish
Instructions
Start by cooking your hamburger and onions together.
After hamburger is cooked, add cans and taco seasoning packet. Add garlic salt and pepper to taste. Mix well. Turn down heat to low and simmer 20 minutes.
Serve with chips, sour cream, guacamole, cheese or whatever your favorite toppings are and enjoy.
