Subquests Pay In Cash, Resources, And More
When you first begin playing Monster Hunter Stories, you'll see around Hakum Village before long that certain characters have a ! above their head. The red and orange ones progress the main story, but blue ! bubbles means you've got a new quest you can accept. Once you've finished what this person is asking for, you'll see them have a white ! bubble instead.
Finishing a few subquests unlocks the Quest board. You'll typically find one in most major settlements across the map, like Hakum Village and Gildegaran. Here, you can accept more subquests, track which ones you're actively working on, and even turn in quests instead of seeking out whoever was offering it. Check the board often, since a lot of the subquests in Monster Hunter Stories involve things you're already doing anyway.
Some people ask you to fight a set number of a certain monster, while others may ask for specific resources and quantities of them, so we found it helpful to accept all the subquests, gather and fight your way through the world, raid monster dens, and check back periodically to see what you already finished organically.
The subquests in Monster Hunter Stories reward you with resources, money, recipes, and more, so be sure to accept as many as you can to boost your stats!

New subquests unlock as you venture into new regions in Monster Hunter World, so be sure to check back at the Subquests Board next time you're in a settlement to see if there's something new to do.
Normal Subquests are most likely to be repeatable, so always check - you'll be doing a lot of this stuff anyway, and it never hurts to earn bonus rewards for the same amount of work.

Every Special Subquest And Its Rewards
You'll notice as soon as you unlock the subquests board that there's a section for "Special Subquests." These are tougher quests that will unlock as you grow as a Rider and raise your star levels, with plenty of them not unlocking until a bit into the Gildegaran storyline.

A lot of the Special Subquests are meant to take place toward the end of the game, hence the slaying-specific goals and the high level caps - the monsters you'll be battling are no joke.
