Our small group has started meeting up again after a month or so of conflicting schedules, so the text messages were flying trying to figure out who would bring what to our weekly pitch-in (that is what we Southern Hoosiers call a potluck).
The main dish was going to be pork loin, and I knew I wanted to make this Hashbrown Casserole sometime that week and asked Michael what he thought about me making it for group. Once he heard the recipe, he was all for it!

Hashbrown Casserole
I will give you this warning though…if you bring this to a pitch-in and have a small child that you have to feed first, you may not get any of the yummy Hashbrown Casserole you brought.
I was feeding Miss Iyla some baby food and chattin’ it up with my friend Sarah while everyone was filling their plates. Sarah was the last person besides me to get her food, and when she returned to the table, she told me that she tried to leave me some. When I went to fill my plate, I saw what she meant. There was one tiny spoonful of my Hashbrown Casserole left! From what Michael said, some people went back a couple of times for extra helpings.
I always feel like I have made a great recipe when there is nothing left at the end of the pitch-in (especially when there is a ton of delicious food there!).

Ingredients
Instructions
Spray your slow cooker with cooking spray
Put your potatoes, ham and pimentos in your crock pot and mix together
In a separate bowl, combine your soup, milk and pepper and pour over potato mixture
Cover and cook on low for 6-8 hours

Slow Cooker Recommendation
This Hashbrown Casserole has casserole in the name, so you know I had to use my9 x13 casserole slow cooker made by Crock Pot. If you aren’t using a casserole crock, I would recommend a 5-6 quart slow cooker.
