I have always been someone to choose a danish over a donut any day. This mini cheesecake danish recipe just makes it super easy!

Another great thing about this recipe is you can make them ahead of time and then freeze them just like you freeze cheesecake.

That way you can just pop one or two out at a time for a fast breakfast on the go. No more having to buy store bought so you will save time and money.

Freezing & Heating Directions:

Make sure they are cooled completely before freezing. Wrap each one individually. This helps to keep the danish protected from freezer burn and makes it easy to grab single ones as needed.

If you do freeze them all on one container or bag without individually wrapping, you run the risk of them all freezing together. Then you end up with one huge frozen danish.

They last well in the freezer for about three months or so. After that, they start forming ice crystals and do not reheat as well as they are more on the soggy side when reheated.

When you are ready to enjoy, there are a few options when you take them out of the freezer.

You can simply take them out an hour or so before you will be needing, to allow them to thaw. Then just eat them as is as they will be room temp with a slight chill (depending on how long you let it thaw before eating).

If you don’t have time to wait for it to thaw, you can pop in the microwave on defrost for 30-second increments until it is right for you.

Just be careful if you do the microwave heating. If you do it too long or on to high power, it will melt the icing and make the cheesecake and fruit filling runny too.

First, you want to preheat oven to 350 degrees.

Then open the can of crescent rolls and unroll them. Coat the dough with melted butter and sprinkle with a little brown sugar.

Carefully roll the dough back up then cut it into mini circles. You want the pieces to be about a half inch thick.

Now line a cookie sheet with parchment paper and lay the cut dough on a cookie sheet. Using your thumb or back of a spoon, press down the center of the dough.

In mixing bowl mix vanilla, cream cheeses, and sugar for the cheesecake mixture. Scrape mixture into a pastry bag or a sandwich bag with a corner cut off.

Then fill the center of dough with cheesecake mixture.

You can leave with just cheesecake mixture or add a drop of blackberry jam or another fruit spread to the top center of the cheesecake filling.

Place pan in the oven and bake for 12-15 minutes or until golden brown.

  • 8 Oz Cream Cheese softened
  • 1/4 Cup Sugar
  • Jam used blackberry but could use any
  • 1 Tsp Vanilla
  • 2 Cans Crescent Rolls
  • 2 Tbsp Light Brown Sugar
  • 2 Tbsp Butter melted

Glaze

  • 4 Tsp Fresh Lemon Juice
  • 1 Tsp Vanilla
  • 1/2 Cup Powdered Sugar
