A sheet pan recipe that is full of life. Curry spiced pork chops cooked over a bed of curried potatoes to make one epic flavour bomb. This recipe is also gluten free.

As for this recipe, I don’t think many people would have thought of a curried sheet pan recipe, so I thought I would give it a go and it makes for such an awesome stress-free dinner. Not only that, the pork and potatoes have so much flavour and fragrance it’s ridiculous.

What’s so good about sheet pan recipes?

Sheet pan recipes actually have quite a few benefits, here’s a handful of them:

  • Many sheet pan recipes inspire clean/healthy eating that is often great for weight loss. I see a lot of veggies involved in sheet pan recipes, such as brussel sprouts, green beans, asparagus and broccoli and so on, which I am a huge fan of.
  • Sheet pan recipes tend to be quick and easy.
  • Most sheet pan recipes don’t require a lot of washing up.
  • You can make loads of easy desserts with sheet pan recipes. Such as cheesecake, brownies, s’mores, muffins, shortcake, biscuits, apple pie and so much more!
  • Regardless of whether you’re making food for one, for two or a crowd. Sheet pan recipes are a great stress-free option.
  • So many ingredients can be used for sheet pan recipes. I often see chicken thighs, sausages, eggs (for breakfast sheet pan recipes), shrimp, ground beef and fish.
  • Sheet pan recipes can be great for meal prep and bodybuilding style recipes.

So there are some reasons as to why you may want to give sheet pan recipes a go.

Are the potatoes mashed or roasted?

They are roasted, then smashed. And if you’re wondering what I mean by smashed, it’s just squashing the potatoes down a little bit with a potato masher, rather than mashing them.

So first, I coated my potatoes with the curry sauce, spices and seasoning. And then I roasted them until cooked through. Once cooked, I simply used a potato masher (or something similar) to give the potatoes a good squash.

So why squash or smash them? Why not just roast them? Well, because when you squash them, and you put them back in the oven to roast with the pork chops. The potatoes go extra crispy, and they develop the most satisfying texture.

Now, let’s go over how to prepare the meat.

How to cook the pork chops

Personally, I don’t muck about with pork, I always like to cook it all the way through. Although we don’t want to overcook it either. So here is the method I like to use when roasting pork chops.

First, we season and flavour the pork with our salt, pepper and spices.

Then, I like to fry the pork chops for 1 to 1 and a half minutes on each side in a super-hot pan with a high smoke point oil.

And from there, I place them in a hot oven (200 degrees C) to cook for about 10 minutes. In this case, I placed the seared chops over my potatoes before placing in an oven.

And it’s that simple! As you can see, this recipe doesn’t require a huge amount of work or labour.

Curried Pork Chop and Potato Sheet Pan Recipe

Curried pork chops and potatoes, all baked on a tray until delicious and fragrant.

  1. Preheat your oven to 180 degrees Celsius (350 degrees F).

  2. Mix the curry powder, ground cumin, garam masala, ground coriander, salt and pepper together, then transfer half of that spice mix to a separate bowl.

  3. Put your diced potatoes, curry sauce, and one half of your spice mix in a large bowl and mix together until well combined.

  4. Lay the potatoes out over a baking tray, and then roast in the oven for 35 minutes.

  5. Rub the other half of your spice mix over the pork chops.

  6. Once the potatoes are cooked, take them out of the oven, the use a potato masher to squash them down (don't mash them, just squash them a bit).

  7. Turn the heat of the oven up to 200 degrees Celsius (400 degrees F).

  8. Put your green beans over the potatoes, make sure they are spread out nicely

  9. Pre-heat a pan over high heat (fans on or windows open), add your ghee, once the pan and ghee are both nice and hot, add your pork chops and fry for 1 – 1.5 minutes on each side to give them some nice colour.

  10. Turn the heat off, then transfer the pork chops over the green beans and potatoes on the tray.

  11. Cook in the oven for 10 -12 minutes.

  12. Serve the pork chops and potatoes with a salad, perhaps some poppadum’s or faratas and enjoy.

Recipe Notes

  • This recipe is fantastic for meal prep!
  • Don't mash the potatoes, just squash them a bit.
  • Notice, I used curry simmer sauce, NOT curry paste. The paste is a bit too intense and acidic in my humble opinion.
  • Feel free to use other ingredients, for example, chicken thighs instead of pork chops (make sure you know how long to cook them), or sweet potatoes instead of regular potatoes.
  • Preheat the pan for at-least 1-2 minutes before you start frying the pork. So that you get a good sear on each side.
