I love to find salad dishes I can make for my family that aren’t your traditional salad recipes. Carrot Raisin Saladis delicious and my kids hardly notice the fruits and veggies in it, so it’s simple to get them to eat it! In fact, they eat it without complaining each time!

What You Need
2 cups shredded carrots
1/2 cup raisins
1 large apple (I used a Fuji apple)
1/2 cup fresh pineapple, diced
1/3 cup purple seedless grapes, halved
3/4 cup mayonnaise
1/4 cup plain Greek yogurt
1 Tablespoon brown sugar
1/4 teaspoon salt
1 Tablespoon lemon juice
How To MakeCarrot Raisin Salad
Core, peel and dice the apple. Add the apple to a small mixing bowl and toss with lemon juice (this will keep the apple from browning).
In a large mixing bowl, add all of the ingredients and gently toss to coat.
Cover and chill for at least 2 hours before serving.
Keep yourCarrot Raisin Salad refrigerated and covered in an airtight container for up to 2-3 days. This is a great recipe to make ahead for family gatherings at your house, or even at a different location. This dish travels well and will stay cool in a cooler for even a few hours in the car.

I am totally not a fan of carrot salad – or at least have not been in the past but the inclusion of yogurt puts a different spin on it and I may have to try it. It is definitely colorful and inviting.

I would never think to put these two things together, then I think about how much carrot cake I’ve eaten, which has raisins in it! Sounds good!
